Simple Butter Cookies
- 180g cake flour
- 20g corn flour
- 100g butter, room temperature
- 80g caster sugar
- 1egg yolk
- Sift together flours in a medium bowl. Set aside.
- In a large bowl, add the sugar to the butter in 3 additions and beat till light and fluffy.
- Beat in egg until combined.
- Add in the flour mixture in 3 additions and stir with a spatula to form a soft dough .
- Double wrap dough in plastic wrap, flatten with a rolling pin and refrigerate for 30 minutes.
- Preheat oven to 150°C.
- Line a baking sheet with baking paper.
- Remove dough from refrigerator and roll it out on a slightly floured working surface.
- Cut out dough with slightly-floured cookie cutters.
- Bake for 15-18 minutes, one tray at a time.
- Cool on baking sheet for 1 minute, then transfer to wire rack to cool completely.
Yield : 35 cookies
My own reference:
- Butter 200g
- Sugar 100g
- almond powder 50g
- flour 320g
- 1 egg
- Mix all ingredients together
- Place into fridge for 2hours
- 2hr later, roll over and mould shape
- Oven: 190 degree C, preheat 10min
